Anyone can cook potatoes! Maybe. But still, there are always new tips and tricks that can be learned
Peel the potatoes, cut them in half and put them in the pot – yes, that’s roughly how everyone cooks their potatoes. But have you ever thought about which potatoes are specifically suitable for which dishes?
Basically, a distinction is made between boiled potatoes and jacket potatoes, depending on how they are prepared. The preparation also ultimately determines how many vitamins are still retained in the potatoes (see nutritional values). The preparation of boiled potatoes is the most vitamin-preserving, the vitamin C remains almost completely contained. With boiled potatoes, the loss is already up to 30 percent.
There are different types of boiled potatoes available from your garden, for example firm boiled or floury boiled. Potato dishes generally turn out better if you choose potatoes that are best suited for cooking.
For a mashed potato, soups or for dumplings, this would be floury cooking, while the firm cooking varieties are more suitable for salads, fried potatoes or gratins.
Prepare boiled potatoes from the garden
Unlike jacket potatoes, boiled potatoes are peeled before cooking. Above all, the germ buds, the so-called eyes and green areas must be thoroughly removed, because they contain the toxic substance solanine. Peeling should always be done just before cooking so that valuable ingredients are not lost unnecessarily. Then cut the peeled potatoes into two halves, if the potatoes are very large, then you can also quarter them.
The right cooking
” Tip 1:
Most fill so much water in the pot, so that all potatoes are completely covered. But you don’t have to. As long as you keep the lid closed while cooking, the tubers will also cook through the resulting water vapor. It is enough if the water in the empty pot is about two fingers high. If you are afraid that the potatoes will burn, you can also put on a little more water.
” Tip 2:
Cooking with less water is much gentler, however, as important vitamins are not lost as quickly here. You can also get yourself a strainer insert and hang it in the pot. This will also prevent you from burning the potatoes.
” Tip 3:
As for the amount of salt, go very slowly. What is once salted, is hardly salvageable, but you can always re-season. Place the potatoes in the salted water, which you then bring to the boil briefly. Then you can turn down the temperature, the water should then only simmer.
After 20 minutes, poke the potatoes with a kitchen knife to check if they are already cooked. Normally, boiled potatoes need a cooking time of 20 to 30 minutes.
Prepare boiled potatoes
Boiled potatoes are prepared with skin and therefore you need to wash the potatoes quite thoroughly under cold water. To remove stubborn dirt, it is recommended to use a vegetable brush. Green spots and eyes should also be cut away during this type of preparation
The right cooking
Cooking boiled potatoes is hardly different from the preparation of boiled potatoes. Again, add very little water to the cooking pot, as long as you keep the lid closed while cooking. For boiled potatoes, you should use a little more salt, since they cook with their skins on. Otherwise, proceed as with boiled potatoes.
Boil garden potatoes
The yellow tuber is in high season. To preserve vitamins and flavor, it is important to process it correctly. This is the only way to transform the potato from a side dish into a delicious main course.
Potatoes are a popular side dish. You can either boil the tuber in water or steam it.
Cooking time of waxy potatoes
If potatoes are cooked too long, they become too soft or fall apart. It is therefore important to respect the cooking time.
Depending on their size, waxy potatoes take about 15 to 20 minutes to finish cooking. It is best to take tubers of similar size so they are ready at the same time. A cooking test helps to check the consistency of the potatoes. To do this, pierce the cooked tuber with a knife or fork. If it slides off the knife or fork, it is done.
For boiled potatoes use waxy potatoes. They are peeled before cooking. The best tool for this is a peeler. Put the potatoes in a pot with plenty of water and a big pinch of salt and bring everything to a boil. Once the water boils, you can reduce the heat and put the lid on the pot. The potatoes should now cook in the hot water for about 15 to 20 more minutes.
One serving equals between 150 and 200 grams of potatoes.
To see if the potatoes have the right consistency, prick them with a fork.
If you want to serve parsley potatoes instead of boiled potatoes, pour off the water as soon as the potatoes have almost reached the cooking point. Then toss the hot potatoes in a little butter in the pot and sprinkle with parsley before serving.
If you want to serve fried potatoes, also use waxy potatoes. For the preparation of mashed potatoes, it is best to use floury boiling potatoes.
Clean potatoes with a brush under cold water. Then place the potatoes in a pot and fill it with water until the tubers are completely covered. Add a pinch of salt and bring everything to a boil.
Once the water is bubbling, turn the temperature down a bit and let the jacket potatoes cook in the closed pot for about 20 minutes. Once the potatoes are done, drain the water and peel the skin.
To make peeling easier after cooking, score the center of the still-raw potato in a circle. It is important not to cut too deeply. Only the skin should be cut through. Then boil the potatoes as described. After draining, briefly quench the hot potatoes in the pot with cold water. Now you can pull the skin down the sides without burning yourself.
Cooking sweet potatoes
Sweet potatoes are cooked in the same way as jacket potatoes. Put the cleaned tubers in a pot with water and salt. Bring everything to a boil and then regulate the temperature back down. With the lid closed, the sweet potatoes will then cook for about 40 minutes, depending on their size.
If you prick the sweet potatoes all around with a fork before cooking, you can shorten the cooking time.
Cooking potatoes in the Thermomix
Add water and a pinch of salt to the mixing bowl. Now hang the cooking insert in the appliance. Weigh in the potatoes and cook everything for around 25 minutes on level 1 Varoma. Once the potatoes are done, remove the cooking insert using the spatula.
Cooking potatoes in the microwave
Clean the potatoes and cut them in half. Put the still wet potatoes into a freezer bag and close it with a thread. Now poke a few holes in the freezer bag with a fork or a roulade needle. Cook in the microwave, on the turntable and without the cover, for about five minutes at 800 watts.
Ready in 15 minutes: Steam cooking potatoes
Steaming is a gentle way to prepare potatoes. To do this, pour some water into a pot and place a steamer insert on top. Important: The water must not be so high that the potatoes in the steam insert lie in the water. Now peel the potatoes and cut them into cubes of about the same size. Put the cubes into the steamer insert and close the pot lid.
Once the water is boiling, you can reduce the stove temperature slightly. The water should be at a gentle simmer. The rising steam will cook the potatoes until soft and tender. Depending on the size of the cubes, they will be ready to eat in about 15 minutes.
Boiled potatoes from the steamer
If you have a little more time, you can also steam cook whole potatoes with their skins on. Make sure all the potatoes are about the same size so they cook at the same time.
Depending on the size of the tubers, the cooking time here is about 30 minutes. It is usually faster in a special steamer. Follow the manufacturer’s instructions for preparation. Many devices cook whole potatoes with skin in about 15 to 20 minutes, depending on the temperature you set beforehand.
